Is there a specific English term for "cuisine du marché"? The term is used to describe a type of cuisine (restaurant category). From what I know, it refers to cooking with only the freshest ingredients, but that seems rather vague to me.

Also, would you have a reference to suggest for culinary translations (menus, etc.)?

In the US they're called "farmers' markets" since the market is the supermarket.

Cultural context Unfortunately, markets have different connotations in different contexts. In London fruit and veg direct from Covent Garden market was absolutely fresh as that was a wholesale market. However from e.g. Berwick St. market (to name a market that I knew well) it might be well past its best. Though Britain now has "French farmers' markets", at least in the London area, other market produce is generally cheap rather than good.

market cuisine simply means there's no fixed all-year-round menu and the chef doesn't bend over backwards to follow recipes. He cooks based on the ingredients of the season and what comes to him fresh from the market. (Sp. "cocina de mercado" & D. "Marktküche").

In that case, if it's a French restaurant, you could always leave it in French (perhaps in italics) as (a) it sounds better and (b) most people will be able to work out fairly easily what it means.

I didn't have much more context, as it is used mainly as a category, but here is a sentence if that can be helpful:
