Can anyone in the film/ TV industry confirm if 'Director and Sound Engineer' is a good translation for this role or if 'Director and Sound recording' is better.

Is the person the overall director or only the Sound Director - I think knowing that makes the difference in how this would be translated.

As this is a job title, it is important to make both parts match. If you were talking about the functions performed, then it would be direction and sound recording.

As noted by SJLD, sound recordIST is better. Sound engineer might be more to do with the detailed manipulation of the recorded sound, rather than with the recording itself.

Réalisation is director and prises means recording, so prises de son would be Sound recording.
