Ingredients for 4 persons:
1 chicken
500 grams green cracked wheat “freekeh”*
1 trickle corn oil (or sunflower oil)
1 onion
Half a teaspoon cardamom
Half a teaspoon bahar*
Half a teaspoon cinnamon
Pepper
Salt
One liter water
Ingredients for the sauce:
100 grams minced meat
5 tomatoes
2 onions
One trickle olive oil (or sunflower oil)
Half a teaspoon hot pepper
Salt
Directions:
Clean the chicken, quarter it and place it and a pressure cooker together with the sliced onion, the spices and the liter of water. Shut the cooker and cook under pressure over medium heat for 10 minutes. Remove the chicken and set the broth aside.
Wash the wheat, put it in a salad bowl, immerse it in water then drain it. Repeat this operation six times before immersing the cracked wheat in a salad bowl of hot water (approximately 85 °F) for 5 minutes.
Place, then, the wheat in a pot and add the broth in. Cook over high heat for 3 minutes, cover, and simmer over low heat for 10 minutes. Finally, set the pot aside after adding a trickle of oil.
Arrange the chicken in a dish and grill it 15 minutes in a 300 °F oven.
Pour the wheat in a large dish and lay the chicken on top.
Sauce preparation:
Mince the onions and brown them over low heat in a covered oiled pot along with the minced meat for 5 minutes.
Wash the tomatoes, dice them and combine them with the onions and the minced meat.
Wash, spread some pepper, cover the pot and cook everything over low heat for 15 minutes.
Serve the sauce separately.

Elaboración:
Limpiar el pollo, trocearlo y ponerlo en la olla a presión con la cebolla cortada en rodajas, las especias y el litro de agua. Cerrar la olla a presión y cocinar a temperatura media durante 10 minutos. Sacar el pollo de la olla y reservar el caldo.
Lavar el trigo metiéndolo en un bol con agua y escurriéndolo después. Repetir esta operación 6 veces antes de sumergir el bulgur en un bol de agua templada (a unos 30 ºC) durante 5 minutos.
Sacar el bulgur del agua, ponerlo en una cazuela y añadir el caldo del pollo. Cocinar durante 3 minutos a fuego fuerte. Después, bajar la temperatura, tapar y seguir cocinando a fuego lento durante 10 minutos más. Retirar la cazuela del fuego y añadir un chorrito de aceite.
Poner el pollo en una fuente y hornear a 150 ºC durante 15 minutos.
Colocar el trigo en una fuente grande y poner encima el pollo.
Elaboración de la salsa:
Trocear las cebollas y dorarlas en una cazuela con aceite junto con la carne picada durante 5 minutos a fuego lento.
Lavar los tomates, cortarlos en cubos e incorporarlos a la cazuela con las cebollas y la carne picada.
Añadir un poco de pimienta, tapar la cazuela y cocinar durante 15 minutos a fuego suave.
Servir la salsa aparte.
