As an editor / copyeditor, I correct mistakes and cut the fat from writing so that it conveys your intended message clearly and accurately without the burden of unnecessary jargon. I comment (to suggest a better or more grammatically correct form) or write a query (when something's not clear). I work with the standard style guides (Chicago, AP, etc.) and can work with Plain English and Simple English style guides, among others.)

As a proofreader, I make sure that everything that should be there, is, that it's spelled correctly and consistently and punctuated and formatted correctly.
