This appears to be talking about rivers or some body of water within the valleys.

perhaps this might work:

...surrounded by two wide water filled valleys in the shape of an amphitheater...

it seems likely that they're river valleys as they channel water, but we need more context in order to be sure. If they ARE river valleys, then this is definitely the best way to translate it.

You could also say "two wide valleys that channel water...", but it sounds less natural.
