Depuis que l’homme sait cultiver, il produit des céréales, mais il a besoin d’écraser le grain pour le transformer en nourriture. De cette nécessité et de l’inventivité humaine naîtront les moulins. Au début, le grain était broyé à la main à l’aide d’un pilon. Puis, l’homme va mettre au point un système rudimentaire de deux pierres plates, entre lesquelles il écrase le grain : ce sont les moulins à bras. Il a ensuite l’idée d’employer les animaux pour actionner ces mécanismes, avant d’utiliser la force des éléments : le vent et l’eau. Ainsi, l’homme a su exploiter les forces naturelles et s’affranchir de lourdes peines.
Les vallées de montagne, riches en cours d’eau, étaient des sites parfaitement adaptés pour accueillir les moulins. Les conditions géographiques et climatiques engendraient souvent une vie quasi autarcique, il était alors indispensable pour les habitants de faire moudre leurs céréales, base essentielle de l’alimentation traditionnelle.
Aujourd’hui, seules subsistent quelques ruines dans les vallées alpines pour témoigner de ce passé. Avec les moulins disparaissent des techniques et des savoir-faire très anciens et une certaine forme de sociabilité. Ils représentent l’ultime témoignage de cette activité et nous remémorent les sociétés rurales qui nous ont précédés, leurs gestes oubliés et leurs rythmes révolus.
La restauration du moulin du Burdin
En 1996, la municipalité de Saint-Martin-de-Belleville, consciente de l’importance de préserver et de valoriser patrimoine local et traditions ancestrales, décide de racheter le moulin du Burdin pour le restaurer.
Il s’agit d’un moulin à eau, à roues horizontales, destiné exclusivement à moudre du grain. La date de sa construction est impossible à déterminer précisément, la seule indication fiable étant un plan cadastral daté de 1907. La construction est donc antérieure à cette date. Il fut autrefois la propriété du village des Granges et régi par les procureurs de ce village. Le moulin était mis en adjudication chaque année, le meunier ayant alors la charge de moudre les récoltes de seigle, orge et avoine que lui portaient les familles du village.
La restauration complète du moulin s’est articulée autour de trois éléments : le bâtiment, le mécanisme intérieur et l’ensemble du circuit d’eau extérieur. Si la remise en état du bâtiment et des abords ne présentait aucune difficulté, celle du mécanisme, en revanche, s’est avérée plus délicate. Il a fallu tout d’abord trouver des personnes connaissant parfaitement ce type de marchinerie, pour reconnaître l’ensemble des pièces, diagnostiquer leur état, les démonter, puis les remonter, mais aussi les refaire à l’identique le cas échéant.
L’exposition
L’exposition est conçue en deux parties : la première propose une approche historique et technique des moulins, la seconde partie s’intitule « Du grain au pain » et retrace les différentes étapes, de la culture des céréales à la fabrication du pain.
Il est possible de visiter le moulin et de le voir fonctionner certains jours de l’année (se renseigner dans les offices de tourisme de Saint-Martin – 04 79 00 20 00, Les Menuires – 04 79 00 73 00 ou Val Thorens – 04 79 00 08 08).
La situation
Le moulin du Burdin se trouve à 1450 mètres d’altitude environ, sur la rive droite du Doron des Belleville. La vallée, à cet endroit est largement ouverte, avec des pentes très douces. Le site se trouve en bordure d’un chemin de randonnée, transformé en piste de ski de fond l’hiver.

Ever since man began cultivating land, he has grown cereals but he has always needed to grind the grain in order to transform it into something edible. Necessity being the mother of invention, the mill was born. In the early days, the grain was ground by hand with the help of a pestle. Then man developed a rudimentary system in which the grain was ground between two flat stones: the hand mill. Next man came up with the idea of using an animal to work the mechanism, and later he thought of harnessing the elements, wind and water. Thus he was able to exploit natural forces and save himself a lot of hard work.
The mountain valleys, with their numerous streams, were perfectly adapted for mills. The geographical and climatic conditions meant that locals had to be virtually self-sufficient. It was, therefore, vital that they were able to mill their own cereals, the basic ingredient of local foods.
All that remains today to bear testimony to the past are a few ruins in alpine valleys. As the mills disappear, so do the ancient techniques and know-how, and a certain form of social life. The mills represent the last witnesses to an activity that reminds us of the rural societies that preceded ours, their forgotten actions, their ancient rhythms.
The restoration of the Burdin Mill
In 1996, the municipality of Saint Martin, conscious of the importance of preserving and valuing the local heritage and ancient traditions, especially in a valley where the arrival of tourism has been massive and quite brutal, decided to buy Burdin Mill and renovate it.
It is a horizontal-wheeled water mill, its sole purpose to mill grain. It is impossible to tell exactly when it was built. The only reliable clue is a land registration form dated 1907. The mill must, therefore, have been built before this time. At one point it was owned by the village of Granges and run by the village procurers. Every year the licence to operate the mill was put out to tender, and the successful bidder then milled the rye, barley and oat crops belonging to the families of the village.
The complete restoration of the mill hinged on three elements: the building itself, the interior workings and the entire exterior water circuit. While the restoration of the building and its surroundings did not present any major difficulties, repairing the mechanics proved a much more delicate operation. The first job was to find experts with a perfect knowledge of this type of machinery, able to recognise all the various parts, assess their state of repair, take them apart, put them back together and even reproduce identical parts where necessary.
The Exhibition
The exhibition is in two halves: the first on the history and mechanics of mills, the second is entitled “From grain to bread” and retraces the different stages from the cultivation of cereals to the making of bread.

The Location
The Burdin Mill is to be found on the left bank of the River Doron of Belleville, at an altitude of 1,450 metres. This part of the valley is known for its gentle slopes and is very open. The site is just by a footpath, which becomes a cross-country skiing track in winter.
