In bocca manifesta la sua " toscanità" con dei tannini ben distinti e presenti, il finale è lungo e persistente.

L’azienda di Leonardo e Marco Salustri produce vini ottenuti da una materia prima di tutto rispetto, stilisticamente sobri e rigorosi, provvisti di una buona dose di personalità e decisamente poco inclini alle mode enologiche dell’ultima ora. Certo nel recente passato questa realtà produttiva, con sede ai Poggi del Sasso, non ha dimostrato una continuità qualitativa completamente affidabile, evidenziando qualche incertezza nel dosaggio dei legni, ma i risultati di quest’anno lasceranno chiaramente intuire che l’obiettivo è a portata di mano. Sia il Montecucco Sangiovese Santa Marta ’05 sia il Montecucco Sangiovese Grotte Rosse ’05, infatti, arrivano alle finali, distinguendosi per equilibrio ed eleganza. Il primo, al di là di qualche giovanile chiusura aromatica in un quadro di bella freschezza fruttata, offre al palato un solido impianto strutturale, declinato con dinamismo e una certa grinta. Dal carattere più austero il secondo, che esibisce profumi di grande definizione, rivelandosi al gusto ampio, vitale e dolce, solo leggermente disturbato da qualche nota tostata di troppo. Fragrante e godibile il Narà ’07, Vermentino dal bel carattere sapido.

Leonardo and Marco Salustri, who are not prone to run after the latest winemaking fad, produce wines from impeccable fruit, wines that are serious and authentic in style, and which display quite distinctive personalities. While the recent past has not witnessed flawless reliability from Salustri, which has shown a somewhat unsteady hand with the oak, this year's performances give clear evidence that they are close to their goal. Both Montecucco Sangiovese Santa Marta ’05 and Montecucco Sangiovese Grotte Rosse ’05 competed in the national finals, each outstanding for equilibrium and finesse. Santa Marta, apart from a momentary closure due to its youth, introduces bright, crisp fruit, followed by a solid profile and a nicely sinewy progression with admirable energy. Grotte Rosse is a bit more austere, but with superb aromatic definition on the nose. It then opens very wide, vibrant yet smooth, with just a small rough patch from an extra note of oak. Narà ’07 is a fragrantly savoury Vermentino, enjoyable now.

Uve campionate col gps, presse "intelligenti", analisi tempestive: così cambia il modo di fare vino
Borgonato, 28 agosto 2008 - Franciacorta in piena vendemmia: da Berlucchi, azienda leader del metodo classico, la raccolta è iniziata il 18 agosto e prosegue sotto il segno dell'ottimismo, i primi mosti presentano eccellente limpidezza e ottimo profilo aromatico.
Con la vendemmia di quest'anno, l'azienda bresciana completa il progetto di sviluppo del settore produttivo avviato da un decennio.
Una "piccola rivoluzione" iniziata nel vigneto: dal 1999 al 2006 le vigne in Franciacorta sono state completamente rimpiazzate da nuovi impianti ad alta densità (10.000 ceppi/ha), dove ogni pianta fornisce un solo chilo d'uva, ossia cento quintali per ettaro. Una resa per ceppo moderata, che garantisce materia prima eccellente: la minor produzione consente la completa maturazione zuccherina e aromatica in quanto l'apparato radicale alimenta un numero inferiore di grappoli e concentra le sostanze nutritive in pochi frutti.
Sempre in vigna, si concretizza quest'anno il progetto "Milleeunavigna", creato nel 2006 in collaborazione con la Facoltà di agraria dell'Università statale di Milano. I vigneti dei conferitori Berlucchi - ben cinquecento ettari, circa un quinto delle uve a denominazione d'origine franciacortine - beneficiano della "precision farming", l'agricoltura di precisione. Tutti gli appezzamenti sono stati mappati in base alla tipologia di suolo (immagine 1, zonazione) e fotografati dal cielo con un apparecchio a raggi infrarossi. Le immagini sono state elaborate in base alla loro cromìa: le aree in rosso presentano maggior vigore vegetativo, espresso in metri quadri di area fogliare per ceppo, e sono caratterizzate da maturazioni più lente, maggiori acidità e minor grado zuccherino. Al contrario, le aree verdi identificano i filari dove il frutto presenta zuccheri più elevati e carichi produttivi inferiori (immagine 2, mappa). Sulla base delle "mappe di vigoria" l'incaricato ai campionamenti si sposta tra i filari con un palmare dotato di gps contenente tutte le mappe, visualizza in tempo reale la sua posizione e preleva campioni attendibili dei vari livelli di vigoria. "Il campionamento dei grappoli è indispensabile per stabilire la data di vendemmia e la destinazione delle uve alle varie tipologie di prodotto: in questo modo, ha affidabilità totale. La vendemmia è effettuata per microaree, rispettando la vocazione del vigneto e i tempi ideali di maturazione delle uve, vigneto per vigneto", dice Arturo Ziliani, Vice presidente Berlucchi ed enologo.
Una volta in cantina le uve, cernite a mano, sono pressate e vinificate separatamente, ottenendo vini dalle caratteristiche sorprendentemente diverse, anche se generati dal medesimo vigneto. Si tratta della cosiddetta enologia di precisione, pratica di cantina che valorizza al meglio il frutto di ogni vigneto. Una prassi che in cantina è supportata da due avveniristiche presse, le francesi Coquard, capaci di lavorare ogni giorno l'uva di sette ettari: una pressatura rapida ed efficiente evita l'insorgere di processi microbiologici non controllati nei grappoli in cassetta.
Inoltre, la particolarità della Coquard è il piatto inclinato, che favorisce la discesa rapida del mosto, illimpidito grazie a questa prima filtrazione naturale. Inoltre, il mosto rimane per un tempo limitato a contatto con la buccia, notoriamente ricca di polifenoli, catechine in particolare: questi composti rendono le basi spumante - vini Chardonnay, Pinot nero e Pinot bianco destinati alla rifermentazione in bottiglia - troppo aromatiche. A ciascun movimento di pressa vengono analizzati i parametri di riferimento ((brix, acidità totale, pH, acido gluconico, catechine), e la pressione esercitata sulle uve è modificabile in base ai rilevamenti. Il mosto arriva quindi in quattro diverse vasche, frazionato in base alla qualità, e, dopo l'illimpidimento in serbatoi refrigeranti, passa alla zona di vinificazione.
Infine, con la vendemmia 2008 si inaugura il nuovo laboratorio d'analisi, che permette il controllo costante di tutta la filiera produttiva e il mantenimento dei parametri necessari a perseguire l'optimum qualitativo, garantendo intanto la salubrità del prodotto. E' scelta comune per le aziende vitivinicole affidarsi a centri d'analisi esterni: la presenza di una struttura interna garantisce la totale sinergia con il lavoro dell'agronomo e dell'enologo, che possono beneficiare di tempestivi dati analitici.

Grape sampling with GPS, “intelligent” presses, real-time analysis: the direction winemaking is going
Borgonato, August 28 2008 - Franciacorta in full harvest: Berlucchi, sparkling wine sector leader, began picking August 18, and continues bringing in fruit, buoyed with optimism generated by rich aromatics and outstanding clarity of the must.
This year’s harvest brings to completion the production development programme that the Brescia-based wine producer launched a decade ago.
A “small revolution” that began in the vineyard: during the years 1999 through 2006, the vineyards in Franciacorta were totally replaced by new plantings, at a density of 10,000 vines per hectare. A relatively low yield per vine of only one kilo per vine, or 100 quintals per hectare, ensures the highest-quality fruit: low production results in higher levels of aromatic compounds and sugars, since the root system must nourish a reduced number of clusters, and thus the nutrients are concentrated in a smaller quantity of grapes. Also on the vineyard front, the "Milleeunavigna" (Thousand and One Vines) project, launched in 2006 in collaboration with the Crop Science Department of the University of Milano, has seen its first concrete application this year. The vineyards of Berlucchi’s grapegrowers, covering fully 500 hectares, or about a fifth of the DOC-registered vineyards in Franciacorta, are now seeing positive results from precision viticulture. All of the vineyard parcels were mapped according to soil profiles (image 1, zonation) and aerially photographed by infrared camera. The photographs were then colour-interpreted. The areas in red show the highest vegetative vigour, measured in square metres of leaf surface per vine; they are characterised by more gradual growth, higher acidities, and lower sugar levels. On the other hand, areas in green indicate vine-rows showing higher sugars and lower yields (image 2, map). The grape-sampling technician navigates the rows by utilising these “vigour maps”; using a hand-held computer containing all of the GPS-based maps, he can ascertain his position in real time and can select samples according to the various vigour levels. “Sampling of the clusters is crucial to determining the harvest date and which grapes should go to produce which types of wines. With this method, we have a totally reliable method of doing that. Harvesting is thus carried out in micro-areas, with full respect for each vineyard’s unique character and for each vineyard’s individual moment of ripeness,” says Arturo Ziliani, Berlucchi VP and winemaker.
Once the grapes are received in the cellar and hand-sorted, the various lots are pressed and vinified separately, yielding wines that are surprisingly different, even if from the same vineyard. Known as precision winemaking, this procedure maximises the qualities of the fruit from each vineyard. Such cellar practices take advantage of two futuristic presses manufactured by Coquard of France, which can process seven hectares of grapes per day; such quick pressing prevents the onset of any microbiological spoilage that escaped earlier inspections of the grapes.
The Coquard has a further advantage, a sloping plane that the must quickly travels and which acts as a natural filter, clarifying the juice. The must thus spends less time in contact with the skins, which are high in polyphenols and, in particular, catechins; such compounds render excessively aromatic the base wines intended for sparkling wines—the Chardonnays, Pinot Noirs, and Pinot Biancos that will re-ferment in the bottle. At each advance in the pressing, the must parameters are analysed (Brix, total acidity, pH, gluconic acid, catechins), and the pressure on the grapes is modified accordingly. The must then goes into four different tanks, according to the qualities of the press fractions, and, after settling under refrigeration, is conveyed to the fermentation area.
Finally, the 2008 harvest inaugurates the new analysis laboratory, which makes possible continuous monitoring of the entire production process and the maintenance of parameters that are crucial to absolute quality and to guaranteeing product soundness. Normally, wine producers utilise outside laboratories, but Berlucchi’s internal lab is able to ensure an impressive synergy of the individual efforts of viticulturalist and winemaker, both of whom benefit from timely analytical data. -- Trans Dave Henderson

(…) Tutto questo non testimonia certo un’effettiva forte volontà di affermare l’unicità del Picolit, anche c’è stata un’indubbia svolta rispetto all’epoca della Doc quando quel ricorso all’appassimento delle uve che oggi appare come una chiave di volta ed un termine irrinunciabile per ottenere vini di grande personalità (lo sviluppo di Botrytis cinerea o muffa nobile si registra mediamente solo ogni 4-5 annate) non era ancora patrimonio comune ed elemento qualificante e dove molte aziende preferivano proporre un vino fresco, affinato in acciaio, da commercializzare giovane. Eppure il cambiamento ed il passaggio alla Docg non ha impedito che si delineasse una vera e propria, e inspiegabile, eterogeneità stilistica. Eterogeneità che fa sì che nell’ambito produttivo oggi si riscontrino tipologie diverse e ben distinte di Picolit. Un recente assaggio en primeur di una trentina di vini dell’annata 2006 ha, con grande sorpresa, offerto lo spettacolo di vini dal colore profondamente diverso, variante dal paglierino dorato sino all’ambrato acceso al mogano (un universo cromatico che tradotto in termini di vini di riferimento spaziava dal Sauternes al Passito di Pantelleria, al Vin Santo, al Madera). Ancora più inquietanti, e indiscutibili, i dati analitici di ognuno dei 29 vini degustati.
Come si può difatti costruire un’immagine unitaria – e vincente – del Picolit, che rivitalizzi l’antica leggenda e la riproponga ai tempi nostri, se i tempi di appassimento dei vini possono variare da un minimo di 10 ad un massimo di 90 giorni, se le percentuali delle uve appassite utilizzate nel vino finale passano da un minimo del 60 per cento (con varianti a 70-80-90) ad un totale del cento per cento, se il quantitativo di zucchero residuo grammi litro finale stimato può passare da un regime, quasi secco, di 13,61 ad una quota massima di 321, con passaggi a 110, 150, 206 e l’unico elemento comune finisce per essere l’acidità totale finale stimata variante da 5 ai 7? Procedimenti tecnici tanto diversi portano, oggettivamente all’esistenza di Picolit di stile diverso, che potremmo definire varietale, appassito, botritizzato. Vini che variano in base ai tempi e alle modalità di appassimento e che evidenziano note più fruttate-floreali fresche piuttosto che aromi terziari o sfumature speziate o note di frutta passita, frutta secca, miele o zafferano o accenni di muffa nobile. Nessuno mette in discussione che un appassimento ben fatto e non forzato possa contribuire a dare ai vini, senza uniformarli o standardizzarli, un minimo comun denominatore che si unisca a quell’elemento irrinunciabile che è la loro naturale eleganza, ma il Picolit per essere davvero quel grandissimo vino all’altezza delle proprie ambizioni deve avere un minimo di riconoscibilità, uno “stile” Picolit che non sia contraddetto da un altro “stile” che appaia completamente opposto e contraddittorio. Una simile eterogeneità (che esiste anche nei prezzi dei vini e nel packaging: è stata creata una bella bottiglia sul modello dell’antica bottiglia settecentesca del Conte Asquini, ma pochi produttori hanno deciso di utilizzarla…) crea inevitabilmente seri problemi anche dal punto di vista del matching food and wine. Per alcuni è un errore ridurre il Picolit a solo “vino da meditazione”, come lo definiva Veronelli, a vino da centellinare da solo, e forse bisognerebbe avere la fantasia di rompere lo schema classico che vuole il Picolit abbinato solo a quelle poche, squisite cose, su cui si esalta, come il foie gras oppure i formaggi erborinati (scordatevi l’accostamento ai dolci!). Sarebbe bello trovare il modo di farlo bere anche a tavola, ma quale tipologia di Picolit può andare bene, quello varietale, appassito, o botritizzato, quello da 15 o da 300 grammi litro di zucchero residuo e su quali piatti lo si può arrischiare? A quali piatti della cucina non creativa, non immaginifica come quella dei cuochi stellati, ma normale, è possibile pensare di abbinare convenientemente, rispettandone le caratteristiche e le attitudini un vino come il Picolit ? Ben pochi, temo. Pertanto, delegando ai sommelier e agli chef l’arduo compito di individuare occasioni di proposta, soprattutto al bicchiere, e accostamenti giudiziosi, credo che la vecchia formula del vino da foie gras o da formaggi erborinati resti quella maestra. Se si crede davvero che se il Picolit non trasmette emozioni e non sa entrare nell’anima del consumatore non è vero Picolit, credo che la vecchia intuizione non solo lessicale di Veronelli del Picolit quale “vino da meditazione” per eccellenza, da centellinare, auscultare, rimirare in assoluta solitudine sia tuttora vincente.

Translation - English (…) This in no way evinces a strong desire to affirm the uniqueness of Picolit, but it indubitably represents a step forward from the first years of the DOC, when the practice of appassimento, or semi-drying of the grapes, was not widespread or considered the sine qua non of a wine of great character, as it is today, since Botrytis cinerea, or noble rot, only occurs naturally on the average of every 4-5 years. In that era, many wineries actually preferred to put out crisp, dry, steel-aged versions that went to market young.
However, an evolution in style and the introduction of the DOCG did not prevent the emergence of a marked, and difficult to explain, stylistic heterogeneity, so much so that today’s producers display a spectrum of diverse and distinct styles of Picolit. One recent en primeur tasting of some thirty 2006 versions revealed, quite surprisingly, a visual gamut that ranged from golden straw-yellow to rich amber and as far as mahogany, a chromatic field that in terms of representative wines lumps together the likes of Sauternes, Passito di Pantelleria, Vin Santo, and Madera. Even more disquieting, and incontrovertible, were the technical data of every one of the 29 wines tasted.
How on earth is it possible to put together a common—and competitive—character of Picolit, which would effectively dust off this venerable, legendary wine and re-introduce it into our own world if appassimento periods run from a minimum of 10 to a maximum of 90 days; if the percentage of dried grapes destined for the final wine starts at a minimum of 60% and, passing through 70, 80, and 90, arrives at 100%; if the residual sugars, in grams per litre, can begin at 13.6, or nearly dry, and shoot to a high of 321, with intermediate stops at 110, 150, and 206, with the only element in common being an acidity in the 5 to 7 gram range? Such widely varying practices lead, of course, to Picolits of markedly diverse styles, which we could define as varietal, appassito, and botrytised, where methods of drying, and lengths of time, yield wines that either display crisp fruit-floral notes; or evolved character, nuances of spice, notes of dried fruit, mixed dried nuts, honey, perhaps saffron; or evocations of noble rot. There is no argument that a well-executed, judicious appassimento can make a contribution to these wines, without running the risk of making them all identical; a modest common denominator could spice up that distinctive characteristic that consists in their natural elegance. But for Picolit to truly become the great wine of its own ambitions it must perforce exhibit a minimum of recognisability, a “Picolit style” that cannot be contradicted by another “style” that appears totally the opposite and contradictory. Heterogeneity in the current Picolit versions is obvious in other areas as well, in pricing and packaging, for example; a beautiful bottle was designed along the lines of the 18th-century one used by Conte Asquini, but few producers have adopted it. Its many styles inevitably create serious problems as well with regard to food and wine pairing. Some would regard it a mistake to reduce Picolit to just a “vino da meditazione”, as Veronelli characterised it, a wine to sip reflectively by itself; perhaps one should have the imagination to break with classic conception of Picolit paired exclusively with just a handful of exquisite dishes that throw it into gorgeous relief, such as foie gras or blue cheeses (but absit those cakes!). It would be wonderful to find a way to welcome it into a meal, but which style would one choose, the varietal, the appassito, or the botrytised, the 15 grams of residual sugar or the 300? And which dishes would be its companion, not the fantasticated creations of many-starred chefs, but which normal, “non-creative” dishes of the everyday table can one imagine pairing easily with Picolit, while respecting the characteristics and qualities of such a wine? Very few, I am afraid. Thus, when entrusting to the sommelier and to the chef the demanding task of proposing suitable occasions for the enjoyment of Picolit, especially by the glass, as well as appropriate culinary partners, it would seem, in the end, that the proven formula of foie gras and blue cheese remains the correct one. If one believes that if Picolit fails to arouse delicious emotions and to steal into the wine lover’s soul it cannot be Picolit, then Veronelli’s evocation, and not simply definition, of Picolit as “vino da meditazione” par excellence, a wine to sip, to plumb, to gaze at in utter solitude remains still the key to Picolit’s soul.

25 years of professional experience at top California wineries has uniquely qualified me for specialising in translating everything and anything related to wine. I served, from 1978 through 2003, as Wine Educator, Tasting Room Manager, Director of Public Relations, and Retail and Customer-Direct Sales Manager over a career at Buena Vista Winery in Sonoma, and at Chas. Krug, Domaine Carneros (sparkling wine), Cakebread Cellars, and Robert Mondavi Winery in Napa Valley. In addition, I worked in wine distribution (Vintage Wine Merchants, San Francisco), and held top positions in: wine auctions (General Manager, Sonoma County Wine Auction), wine education (Program Director, National Conference of Society of Wine Educators), and public relations (P.R. Committee of the California Wine Institute and of Sonoma County Wine Growers).
During 8 years’ residence in Italy and over many subsequent visits, I have gained an in-depth knowledge of the Italian wine industry as well. This has enabled me to teach courses on Italy’s regional wines (at Santa Rosa Community College, Santa Rosa, California).
My current/recent translation activities in this field include:
• Over 80 client wineries in Italy (list on request), in 11 regions.
• Articles for publications such as The World of Fine Wine, Decanter, Wine Business Monthly.
• Annual English edition of Gambero Rosso’s Vini d’Italia (past five years)
• Technical and book-length translations, such as Oseleta, paradigma della viticoltura delle Venezie, by Prof. Attilio Scienza and the Gruppo Tecnici Masi Agricola (379 pages).
Few translators can match my mastery of the wine cultures and terminologies of both Italy and the New World. With my extensive familiarity with the wholesale and retail wine consumer, with wine media and education, I always craft a translation in the most effective and appropriate style. I work rapidly, and my clients have come to rely on my ability to turn jobs around, if relatively brief, within 1 day. I will work within any deadline you have.

A life-long passion for literature led to a Ph.D. in Italian Literature (1995, University of California at Berkeley, with specialisation in Renaissance and dissertation on Ariosto), and part-time teaching positions at University of California at San Francisco (Italian Renaissance Literature), Sonoma State University (Creative Writing), and (1982 to present) Santa Rosa Community College, where I teach Italian and Italian Literature.

HISTORY OF ITALY, RELIGION, ITALIAN POLITICS
A life-long passion for history, religious studies, and cultural history included 8 years’ residence and study in Italy (Pontifical Biblical Institute) and in Israel (University of Jerusalem), where I participated in an archaeological dig (Temple Mount). I am deeply read in the entirety of history of Italy, including the Byzantine intricacies of contemporary Italian politics.
