Taken from a document discussing reproductions of Napoleonic cavalry helmets.

There is a diagram of the helmet, with "chenille" labelled as the ridge of feathers or hair that stretched from the back to the front of the helmet through the middle. The "plumet" is a group of feathers that stick straight up to the side of this (and are not in a line).
Looking online, this central ridge seems to be referred to as the "plume" but I'm assuming this is the translation for "plumet", so there must be something more specific. Any ideas on "chenille" - or if it is "plume" what "plumet" would be?

Their new helmet was of yellow copper, with iron chinstrap scales and a headband with the letter 'N' in front. The crest had a scarlet comb instead of the cuirassiers black horsehair. The cuirasses were almost identical in design to those worn by the cuirassiers, although they were covered with a sheet of brass (for officers red copper). The visual effect was astounding !

Comment: "Thanks very much for everyone's help - I didn't actually go for any of the suggestions in the end, as I think "crest" would be the raised ridge across the helmet, rather than this specific strip of bristles/feathers. However, I did go for comb, so have selected your answer for points. "
