In list of chocolate ingredients: this is a raising agent, I'm not sure whether this is sodium hydrogen carbonate. I have found this term in several references to raising agents.

However, all the UK sites I have consulted state sodium hydrogen carbonate. I know that the common term used in baking is baking soda, but I think EU law requires the chemistry term to be used in the listing of ingredients in labelling. Is this the same as sodium acid carbonate? My chemistry knowledge dates back a good few years! I have a similar query relating to the ammonium form, but will place another question.
