Queijo Prato is a Brazilian soft cheese, similar to the Danish cheese Danbo. It is one of the most popular cheeses in Brazil, and was introduced by Danish immigrants in the Minas Gerais state.[1] Since the method to produce Prato cheese was the same as Danbo cheese, the differences are attributed to milk characteristics[2]. It is characterized by low salt and lactose content, yellow color and soft taste.[3]

Queijo prato é um tipo de queijo macio de massa prensada e textura semelhante a do queijo Dinamarquês Danbo, tem com coloração amarela e sabor suave. O queijo Prato surgiu da tentativa de colonos dinamarqueses, estabelecidos na região de Coqueiral, no Sul de Minas em produzir o queijo Danbo; mas por causa das diferenças químicas do leite produzido pelas vacas brasileiras surgiu um queijo diferente do original, mas muito semelhante.

Muito difundido e consumido no Brasil, o queijo prato é hoje fabricado em diversos estados. De sabor suave e pouco complexo, é utilizado principalmente no preparo de lanches e outros alimentos.
