One option among many - you can go in lots of different directions with this, without worrying about the literal meaning of "surfer", the author's just having fun with words, you can too!

I am sure that "surfer" is there for a reason, meaning that he makes it look so easy and effortless, ie he glides through the process of cooking/preparing the menus.
Maybe a long shot, but are we talking about a seafood restaurant???
