The SKU identification for a product may or may not be made visible to a customer. SKU numbers can sometimes be seen in online e-commerce sites. (However, many customers are not likely to be familiar with the term.)
An SKU is not the same as a product model number from a manufacturer, although the model number could form all or part of the SKU. The SKU is established by the merchant.

Ce terme est en effet souvent utilisé dans la distribution, mais également dans les principes d'inventaires.

Pour l'unité de gestion de stock, j'ai déjà plutôt vu : stock management unit.

Ce n'est qu'un complément aux réponses précédentes:
- la plupart des grossistes et constructeurs (parmi ceux que j'ai consulté: Ingram, TechData, IBM, Dell) utilisent l'abréviation SKU même en France
- dans du texte j'utiliserais plutôt "unité de stock" quitte à expliquer entre parenthèses à la première occurrence
- je n'ai jamis vu l'abréviation canadienne recommandée en France
